You can implement a system to start off organized or you can wait till the end of the year and then:
Separate receipts as well as review and annotate on bank statements
Create spreadsheets or record data manually
Title each spreadsheet the same as the categories on your write off list
If you are using a filing system to drop receipts in, label the categories consistent with the labels on your spreadsheets and write off list
If you are going completely digital, scan all receipts and checks for your digital records
